US citizen here. If no laws in Ireland prohibit the exchange of Monero then I do not see why not. I am sure you’d have extra work factoring your XMR sales for tax purposes though.
The most difficult part would be teaching users how to purchase Monero for your ‘CBD’ store. 
I’d suggest looking at pornhub.com. Why?
The world’s largest pornsite was refused service by the Payment Gateway Networks and they now have to accept Crypto to stay in business.
You can subscribe to their service in Ireland using Monero. Don’t ask how i know this. Lol. Idle curiosity / research.
Their payments are handled by a third-party company. My suggestion: sign up, subscribe using Monero, and you’ll see how they handle client onboarding payments using this Cryptocoin. Follow the same approach.
The Cake Cryptocoin Wallet looks promising also. Have your customers install it. As another poster suggested. Remember to cut the taxman in. Lol.
for me is make any crypto payment more cheaper than the other, then more than that i make also system that simplified ppl using crypto.
as now on 2025. my services using full crypto. for technical approach, welp… ofc you need to make some callback and some script to check it for sure. but i think the hard part was making your user slowly switch to crypto
